Halloween Hedgehog Balls
Hi friends!
Today's card is made with Stampin' Up Halloween Hedgehogs, a retired set I just got thanks to another blogger. It is a pretty straightforward card. I just colored in the image with pencils and Gamsol. The only "trick" to this card is that I used an exacto knife to cut two tiny slits at the crease of the textured mustard cardstock so that I could criss cross the ribbon through the card.
I tied a Making Memories Halloween chipboard button with frayed gold cord then put it on top of the orange ribbon with a pop dot.
I wanted to share with you a recipe my mom used to make me as a kid. It is called Hedgehog Balls (okay....it is actually called Porcupine Balls, but I wanted it to fit in with the card :P). They are meatballs made with dry, uncooked rice that puff up as they cook to look like porcupine spines. Kids just love them they are so fun. Nothing beats these on a chilly autumn day! We eat them with mashed potatoes and carrots.
Ingredients:
1 pound hamburger
1 small white onion, diced
1 egg
1 tsp each garlic and onion powder
1/8 cup cream
1/4 cup unccoked long grain white rice
butter
1-2 cups beef broth
1 can Cambell's Cream of Mushroom soup
pepper, to taste (I don't add salt as the soup and broth is salty)
Directions:
1. Make the meatballs by mixing hamburger, onion, garlic, pepper, cream, rice and egg in a bowl.
2. Melt 1 TBS butter in a pan and lightly brown the meatballs on all sides.
3. Add the can of soup and broth to the meatballs, making sure that they are covered with liquid (add more broth if necessary). Simmer on low heat for 1 hour or until rice is cooked in the meatballs. Serve with mashed potatoes.
Variation: Instead of the soup can, stir 3 TBS flour into 1 - 2 cups beef broth and make a brown gravy. I add spices like poultry seasoning, garlic and onion powder, and pepper to the gravy when I do this.

Just found your site a few days ago and love it. Two of my three favorite things, stamping cards, cooking good and simple foods, & I do like good books. Enjoy reading about your area and seeing pix. These meatballs we used to cook and they were called Swedish Meatballs & they were same with an addition of a dash or two of nutmeg.
