Friday's Dining Debauchery
These are seriously the best Sweet Potato Fries I have ever had! The batter coating makes them so sinful but taste so light and crispy. We made these tonight with breast of chicken sandwiches and served them with a sauce of mayo, pepper and lots of fresh chopped garlic. They were so good I forgot to take a picture so you will just have to imagine how yummy they are!
Battered Sweet Potato Fries
- 1 pound sweet potatoes, cut into thick fries (about 1/2 inch thick)
- 1 cup flour
- 1-2 tsp garlic powder
- 1-2 tsp seasoned salt (to taste)
- 1/2 tsp pepper
- 1/2 tsp paprika
- 1 cup beer (dark ale is best, you may substitute water or non-alcoholic beer)
- vegetable oil for frying (we use canola)
- deep pan to fry in
You want the sweet potato fries to be dry so use paper towel to dry if you need to. Mix dry ingredients of batter together then add beer. You want a thin consistency to the batter so add more water or beer if necessary. Pour oil into your pan so it is 2 inches deep and get the oil hot (we keep it on medium high). Add the fries in batches so that they do not stick together. Take them out when they are lightly browned and taste on to be sure the potato is cooked through - it only takes about 5 minutes per batch if the oil is hot enough. If the batter turns dark brown really fast then you need to turn the heat down.
Serve with ketchup or mayo/garlic sauce. Enjoy the debauchery!
